    Do you remember oatmeal cream pies from when you were a kid? They were one of my favorite treats! But you know what's better than buying a box of them at the store? Making your own!

    I'm so excited to share this oatmeal cream pie recipe with you, because I think it's a delicious old-fashioned dessert that everyone will love. This recipe is simple and easy to follow, and the end result is mouth-wateringly delicious. I hope you enjoy it!

    Oatmeal cream pies are a classic treat that bring back fond memories of childhood.

    The combination of oatmeal and creamy filling makes for a delectable snack or dessert. This recipe is sure to become a family favorite, as it's easy to make and so tasty!

    What You Need To Make Oatmeal Cream Pie Cookies

    Cookie Ingredients :

    • 1 cup unsalted butter
    • ¾ cup light brown sugar
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • Pinch of salt
    • 3 cups oats

    For the cream filling :

    • ¾ cup unsalted butter
    • 2 ½ cup confectioners sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon milk

    How to Make Oatmeal Cream Pies

    Make the cookies

    Preheat the oven to 350°F and line cookie sheets with parchment paper.

    In a medium bowl, add unsalted butter and mix it until smooth.

    Add light brown sugar and granulated sugar, mix it again until everything is well combined.

    Add eggs and vanilla and mix until combined.

    Use a medium bowl and combine together the dry ingredients like flour, baking soda, cinnamon and pinch of salt.

    Slowly add wet ingredients to the dry ones and stir it together.

    Finally, add the oatmeal and mix it again until fully incorporated.

    Place 2 tablespoon size balls of the mixture onto a prepared cookie sheet using a spoon. Shape it a little if desired.

    Bake in the oven for about 25 minutes until golden brown.

    Make the filling:

    In a bowl place the unsalted butter and cream with the hand mixer, until smooth.

    Add confectioners sugar, vanilla extract and milk. Stir it all together again.

    On one bottom-side of a cookie, fill with cream filling and place a second cookie bottom on top like a sandwich. Then enjoy!
