Prepare the Pork Belly:

  • Place the pork belly, skin side down, into a pot of boiling water. Let it simmer on low heat for 15 minutes.
    800 g Pork Belly
  • Remove the pork belly from the water and place it on a flat surface. Pat it dry using paper towels.

Prepare the Meat:

  • Turn the pork belly skin side down.
  • Make slits around 1-2 cm deep to create preferred bite-sized thickness.
  • Pat dry any excess moisture using paper towels.

Season the Meat:

  • In a small bowl, mix the onion and garlic powder. Rub the mixture over the meat side of the pork belly, including the sides.
    2 teaspoon Garlic Powder, 4 teaspoon Onion Powder

Wrap the Meat:

  • Place the seasoned pork belly meat side down on two large sheets of aluminum foil.
  • Pat dry any excess moisture from the skin with paper towels.
  • Fold the aluminum foil to cover the sides of the meat, leaving the skin exposed.

Prep the Skin:

  • Rub the exposed skin side with white vinegar and let it sit for about 30 seconds to dry.
    1 teaspoon White Vinegar
  • Rub the dried skin side with the desired amount of salt.
    ½ - 1 tablespoon Salt

Create Airflow:

  • Use a tenderizer, poker, or fork to poke/perforate the skin side, enhancing crispiness. Pat dry any excess moisture with paper towels.

Refrigerate:

  • Refrigerate the pork belly, wrapped in foil, for 8 hours or overnight.

Preheat and Air Fry:

  • Remove the pork belly from the fridge. Lightly brush the skin side with vegetable oil.

  • Preheat the air fryer to 200°C (390°F) for a few minutes.

First Air Fry Round:

  • Place the pork belly in the air fryer basket, skin side up. Air fry at 200°C (390°F) for 30 minutes.

Enhance Crispiness:

  • Remove the basket and place it on a flat surface. Use the tenderizer, poker, or fork to poke/perforate the skin side a bit more for extra crispiness.

Second Air Fry Round:

  • Return the basket to the air fryer. Air fry for an additional 20-25 minutes at 200°C (390°F).

Serve and Enjoy:

  • Carefully remove the pork belly from the aluminum foil and place it on a chopping board. Allow it to cool for a bit.
  • Chop the pork belly into bite-sized pieces and serve with your preferred sauce.
