- 3 Eggplants for removing bitterness
- 3 tablespoons Olive Oil
- 1 Onion finely chopped
- 2 cloves Garlic minced
- 1 tablespoon Tomato Paste
- 3 Tomatoes diced
- 1.5 tablespoons Salt
Prepare the Eggplants:
Wash the eggplants and trim off the stems.
3 Eggplants
Cut the eggplants into small cubes or slices, depending on your preference.
Place the eggplant pieces in a colander and generously sprinkle them with salt.
Allow the eggplants to rest for at least 1 hour. This helps remove excess bitterness and moisture.
After resting, rinse the eggplant pieces thoroughly under cold water and pat them dry with a clean kitchen towel.
Air Fry the Eggplants:
In a large mixing bowl, toss the dried eggplant pieces with 2 tablespoons of olive oil to coat them evenly.
3 tablespoons Olive Oil
Place the coated eggplant pieces in a single layer in the preheated air fryer basket.
Cook the eggplants in the air fryer for about 15-20 minutes, shaking the basket every 5 minutes for even cooking.
The eggplants should be golden brown and tender when done. Adjust the cooking time if needed.
Prepare the Sauce:
While the eggplants are air frying, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat.
Add the finely chopped onion and sauté until translucent.
1 Onion
Add Garlic and Tomato Paste:
Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
2 cloves Garlic
Stir in the tomato paste and cook for an additional 2 minutes, allowing it to meld with the onion and garlic.
1 tablespoon Tomato Paste, 3 Tomatoes
Add Tomatoes and Seasoning:
Add the diced tomatoes to the skillet and cook for about 5-7 minutes, until they soften and release their juices.
Season the mixture with salt and stir well. Let the sauce simmer for a few minutes to develop flavors.
1.5 tablespoons Salt
Combine Eggplants and Sauce:
Once the eggplants are cooked in the air fryer and the sauce is ready, combine the air-fried eggplant pieces with the tomato sauce in the skillet.
Gently mix everything together and let it simmer for an additional 5 minutes, allowing the flavors to meld.
