Cucumber Chips

Easy and fun to make, you can have cucumber chips as a healthy alternative to potato chips - or just a fun snack to help use up those cucumbers from your garden!

Ingredients
  

For the dry ranch dressing:

  • ½ cup powdered milk
  • 2 tablespoon fresh parsley
  • 2 tablespoon dry dill
  • 1 tablespoon onion powder optional
  • 1 tablespoon garlic powder
  • 2 tablespoon onion chips optional
  • 2 teaspoon dry chives
  • Pinch of salt and black pepper

Make the dressing.

  • First prepare the dressing by combining all the ingredients together in a small dish and stir with a spoon until they are all combined.

Make the chips

  • Cut the cucumber into really thin circles and place them in a dish.
  • Spray some olive oil in the dish and add 5-6 tablespoon of the ranch dressing.
  • Mix everything together and start layering the cucumber circles in a baking dish prepared with baking paper. Make sure the cucumber circles don’t overlap because they can stick together.
  • Once they are in the baking dish you can spray with oil once again and add a tablespoon or two from the dry dressing but I’ve noticed that it is going to burn a little while baking so it is totally up to you, that step is optional.
  • Bake the cucumber in a preheated oven for around 15 minutes at 400°F (200°C).
  • When you take it out of the oven the chips should be thin and crispy. Serve it with your favorite dressing.
