Ingredients
  

  • 1 cup rice
  • 2 cups water
  • 1 potato cut into cubes
  • ½ onion finely chopped
  • 2 garlic cloves crushed
  • Thumb-sized piece of ginger coarsely crushed
  • 3 tablespoon lima beans
  • 3 tablespoon carrots chopped
  • 3 tablespoon green peas
  • Salt to taste
  • 1 teaspoon red chili powder or paprika
  • 1 tablespoon chicken masala for a vegetarian version, you can use vegetable masala
  • 1 teaspoon turmeric powder
  • 1 tablespoon olive oil
  • 3 cloves
  • 5 black peppercorns
  • 1 cinnamon stick optional

Instructions
 

Prepare the Vegetables:

  • In a large bowl, combine the potato cubes, finely chopped onion, crushed garlic cloves, coarsely crushed ginger, lima beans, carrots, and green peas.

  • Season with salt, red chili powder (or paprika), chicken masala (or vegetable masala), and turmeric powder.

  • Drizzle olive oil over the vegetables and toss everything together.

Air Fry the Vegetables:

  • Preheat your air fryer to 385°F (196°C) for 5 minutes.
  • Once preheated, transfer the seasoned vegetables into the air fryer basket.
  • Air fry them at 385°F for 5 minutes to give the vegetables a head start on cooking and develop some flavor.

Add the Rice:

  • After air frying the vegetables, add 1 cup of rice to the mix.

Prepare the Spice Infusion:

  • In a small bowl, combine 2 cups of water with 3 cloves, 5 black peppercorns, and a cinnamon stick (if using).

  • Pour this spice-infused water over the rice and vegetables in the air fryer basket.

Air Fry the Rice Pilaf:

  • Set the air fryer to 375°F (190°C) and cook the rice pilaf for 20 minutes. Make sure everything is well mixed.

Rest and Cool:

  • Once the cooking time is up, turn off the air fryer but leave the pot inside for an additional 10 minutes to allow the flavors to meld and the rice to continue steaming.

Serve:

  • After resting, carefully remove the pot from the air fryer.
  • Fluff the rice with a fork and serve your delicious mixed vegetable rice pilaf hot. It's perfect as a standalone dish or served with yogurt for a satisfying meal.
