Cucumber Salad Dressing

  • Grate the cucumber using the large holes on the grater.  Allow the cucumber to sit for a few minutes and then drain off the liquid.
  • Grate the onion using the small holes of the grater. This will produce some onion liquid but save the liquid! It gives the dressing a wonderful flavor.
  • Place the grated cucumber and grated onion in a bowl. Add 1 cup of mayonnaise.  
  • Next, add ⅛ teaspoon garlic salt, 1 tablespoon lemon juice, 1 teaspoon sugar, and 1 teaspoon Worcestershire sauce and mix it all together.  
  • Pour it into a container and refrigerate. Oops, I was a little messy, try pouring it into the jar.  
  • Clean the jar, wipe the rim, add a lid and seal hand tight. As you can see I actually doubled the recipe when I made it today so I could share with my sister-in-law.  

Quick and Easy Summer Salad

  • Combine tomatoes, onions, and cucumbers.
  • Add the fresh cucumber salad dressing
  • Enjoy!

Notes

If you want a thinner consistency, add some of the onion liquid back into the dressing or a tablespoon of water.
Add 1 teaspoon of mustard or red pepper flakes for a spicier flavor.
For a creamier dressing, add a tablespoon or two of sour cream.
