Peachy Cantaloupe Soup

A refreshing chilled soup that captures the flavors of summer.

Ingredients

  • 2 ripe cantaloupes peeled, deseeded, and cut into chunks
  • 4-5 medium sized ripe peaches peeled, pitted, and cut into chunks
  • 4-5 leaves of fresh basil
  • 4-5 leaves of fresh mint
  • juice of 1 lime
  • 1 tablespoon fresh ginger grated
  • Garnish: vanilla yogurt fresh mint leaves, small melon balls

Instructions

  1. Using a food processor or blender, puree peaches and pour into a large mixing bowl.
  2. Using a food processor or blender, puree cantaloupe in two batches, adding the basil and mint leaves into one of the batches.
  3. Pour the pureed cantaloupe into the bowl with the pureed peaches.
  4. Add the juice of 1 lime and 1 tablespoon of fresh, grated ginger and mix thoroughly.
  5. Cover the bowl and refrigerate at least 3 hours.
  6. Before serving, taste the soup to see if any additional sugar or honey needs to be added.
  7. Pour in 6 ounces of flavored sparkling water, white grape juice, or sparkling white wine.
  8. Mix thoroughly and ladle into shallow bowls.
  9. Garnish each bowl with a dollop of vanilla yogurt, small melon balls, and a sprig of mint.
  10. Serve immediately.
